Is Inflammation Affecting Your Body?
In the clinic, we work with patients who struggle with all kinds of health issues, from joint pain to GI issues, autoimmune and neurodegenerative, and everything in between. As we are problem-solvers as to WHY one is struggling with health issues, a common issue that comes up with every. single. patient. is INFLAMMATION.
Our amazing bodies were designed to run on the vitamins and minerals we obtain from lean protein, healthy fats, and colorful vegetables and fruit. Unfortunately, today's food industry has made it easier than ever to consume processed foods that our bodies just cannot handle for long periods of time. Even supposedly "healthy" foods, when you read the label, really aren't.
Over time, your cells begin to struggle and are unable to effectively do their jobs to keep your body running well. You then begin to experience a myriad of symptoms including, but not limited to:
-Decreased energy
-Pain and joint degeneration
-Nerve trouble
-Brain fog
-Skin issues
-Hormone imbalances
Which turn into diseases in which doctors are ready to prescribe medications...
-Migranes
-Neurological disorders such as Parkinson's, Alzheimer's, Tremors, MS, Nerve Pain
-Chronic Pain
-Joint Degeneration
-High Blood Pressure
-High Cholesterol
-Insulin Resistance

This is the FIRST, MOST IMPORTANT step you can take in improving your health!
But I already eat healthy! Subtle Food Sentivities
Yep, we thought we did too. Constant exposure to hidden sugar, preservatives, alcohol, unbalanced omega 3s and 6s, not enough fiber and colors, stress and antibiotic use ALL send us into not only inflammatory states, but into a leaky gut. When our gut linings have been compromised, sometimes healthy food, when consumed in large doses, crosses the lining and enters our blood stream. Our bodies see these food particles as invaders and fire up the immune system to fight them. So, often, there are foods that you have become sensitive to, adding to your inflammation levels, and you don't even realize!
Do I have a leaky gut? (most of us do)
Stress
History of antibiotic use
Consume processed, packaged foods, sugar, alcohol
Have subtle GI issues, skin issues, headaches, pain, fatigue, mood issues
Reduce your inflammation in 21 days
It takes 21 days for your body to eliminate the antibodies produced to fight inflammatory foods. During this time, you will remove foods that are common culprits of inflammation, and boost your nutrient load.
A Complete System Reset
We believe that every year our bodies need a break from inflammatory foods and a boost in cell-supporting nutrients. It takes 21 days to eliminate the residue of these inflammatory foods.
Identification of Food Sensitivities and Allergies
We are going to learn how to pinpoint specific foods that may be causing adverse reactions such as digestive issues, headaches, skin problems and more.
Knock Out Inflammation
By identifying foods that trigger sensitivities, we will be able to reduce, if not knock out, inflammation in the body. This could potentially improve conditions such as arthritis, IBS, Lupus, ect.
Increased Energy Levels
By eliminating foods that our bodies have difficulty processing, we will be able to reduce fatigue and hopefully increase energy.
Weight Management Support
Focusing on whole, unprocessed foods will reset your system and help to promote healthy weight management.
Improved Digestive Health
A balanced gut can provide relief from symptoms such as bloating, gas and bowel issues.
Nutrition Awareness / Learn to Find Hidden Ingredients
What is labeled as nutritious may not be what is nutritious for you. There are so many sneaky ingredients that our food manufacturers use, and we are going to learn what to look out for and how to read labels so that we make more informed choices.
Enhanced Skin Health
Avoiding trigger foods can lead to clearer skin and improvement in conditions such as eczema, acne, and psoriasis.
Improved Mood and Mental Clarity
Removing sensitivities can lead to reduced anxiety, increased mood and better mental clarity.
Mindful Eating Encouragement
The process of eliminating and reducing foods will encourage greater awareness of dietary habits and food choices.
Personalized Dietary Plan to Prevent Future Health Issues
By learning your own unique sensitivities, you will be able to stay away from foods that trigger inflammation, which could lead to potential long-term health improvements and prevent future issues.
In the clinic, THIS is what moves the needle for my patients who struggle with health issues that have an underlying driver of inflammation.
My patients have reported significant improvements, many within the first weeks of the program:
I personally have experienced how my body reacts to dairy and eggs... I had no idea that eggs were contributing to my low-lying inflammation! When our bodies are already in a state of inflammation, some of these offenders are NOT obvious. As we say in the clinic, the water is muddy, and it can be hard to tell who or what is truly contributing to the problem...when there are many!
When we, as I like to say it, "clean house," it levels the playing field so we can truly determine what foods and ingredients are causing trouble for our bodies.
Everyone will tell you to eat healthy, to eat this or eat that, but no one really teaches you HOW
how to do it on a busy schedule...
Here's what my patients and participants are sharing about their experiences with The Power of Food: Reset Program...
After going to a gastroenterologist and a colorectal specialist for loose, frequent stools and leakage, I was recommended biofeedback for my pelvic floor. So I decided to try an integrative approach different with Jennifer Shepherd. I completed an elimination diet and felt much better. I slowly started introducing foods but became distracted with life circumstances and never completely figured out if there was one specific culprit. Unfortunately, I am back on a protein pump inhibitor for GERD. I no longer drink caffeinated beverages and I take a probiotic daily. The lower GI symptoms still occasionally occur, but not as frequent as before Jennifer's treatments and the elimination diet. Avoiding caffeine, wine, soft cheeses and dairy seem to be common denominators.
When introduced to the idea of doing the Elimination Diet, I was definitely hesitant and unsure if my symptoms of brain fog, fatigue, and throat tightness could even be related to what I was eating.
I was encouraged to start the Elimination Diet by Jen to determine if a part of my diet was associated with my issues. There was a lot of work and preparation to ensure I would have food to eat that did not include items on the list. The first few days were challenging, and it definitely opened my eyes to how maybe I didn't consistently eat as well as I thought I did. By the 7th or 8th day, I started to notice changes in my focus and fatigue levels. I continued 3 more weeks and determined 3 sensitivities as I began to add food back in. Decreasing or eliminating those foods from my diet has greatly diminished my symptoms. I think everyone would benefit from trying this diet at least once in their life to determine if there is something in their diet that is preventing them from being 100% and also enduring a challenge they can look back on being proud to have accomplished.
One of the standout features of this program was the access to previous weeks' lessons, topics and live Q & A session. This allowed me to revisit materials at my own pace and reinforce my understanding, which I found immensely beneficial. In addition, I found the daily wellness logs a useful record that allowed me to reflect upon my progress and adjust as needed. In the past, I often found myself preoccupied with counting calories and obsessing over what I was eating, without fully considering how those foods affected my overall well-being—such as my sleep, mood, energy, and gut health.
This wellness program equipped me with the tools not only to choose healthier options but also to understand how various foods reacted within my body. I learned to listen to my body's signals in a way I had never done before. The supportive community of fellow participants was another remarkable aspect of the course. Hearing their experiences, questions, and "a-ha" moments created a sense of camaraderie that made the journey even more enriching.
I believe I lost somewhere between 8–10 lbs during the program, and have lost 26-30lbs, and still slowly but steadily losing. I am truly grateful for this program and the positive impact it has had on my health and lifestyle. I feel empowered to make informed food choices and am more aware of how my body responds to what I consume. Thank you for this transformative experience!
A few other patients and participants have shared the following...some of these came as exciting surprises for both my patient AND me!
I have more energy.
I am sleeping better.
My anxiety is less.
I have fewer acne breakouts.
I am sleeping better.
My back pain is better.
My plantar fasciitis is better.
My brain fog is less.
My restless legs are better.
My stomach doesn't hurt any more.
THIS...is the Power of Food and what happens when one lowers their inflammation.
I am thrilled to share my experience at the Shepherd Center for Integrative Health.

My Journey
Inflammation & Healing
I’ve been a Physical Therapist for over 25 years, primarily helping people with pain—back pain, knee pain, neck pain, and shoulder pain. Over the last 15 years, my work has evolved beyond just treating pain to restoring the health of organs and systems. I’ve helped patients overcome complex health issues like post-concussion symptoms, hormonal imbalances, mood disorders, trauma, gastrointestinal problems, and more.
In the clinic, I am a detective—doing precise, hands-on work to identify and restore the organs, nerves, vessels, and tissues that need support. For many of my patients, treatment also includes stress management and awareness, nutrition, exercise, and sleep, all to decrease inflammation and optimize health.
The Power of Food
My health journey started early. Since first grade, I’ve struggled with weight, mood swings, and GI issues. I was an overweight child—teased, picked last for teams, and dreaded field day because I always came in last. I struggled with chronic diarrhea and embarressing gas and bloating.
Growing up, I ate Froot Loops, McDonald's, KFC, white bread, and Kool-Aid. My mom was constantly dieting—following plans like the SetPoint Diet with strict calorie counts. She’d hang 1200, 1400, and 1800 calorie charts on the fridge. I remember the day she decided to help me lose weight—it was the 5th grade. She’d cook skinless chicken breasts, buy Diet Coke, and we’d do Richard Simmons' exercise routines before school.
By seventh grade, I had my “glow-up,” but my mood swings, back pain, and heavy periods didn’t go away. Low-fat eating was all the rage, so I counted calories, avoided fats, and drank diet soda like water. But I was still gassy, uncomfortable, and embarrassed.
In college, things got more complicated. My mood swings worsened, I had knee pain, plantar fasciitis, and my GI issues were worse than ever. My periods were heavier and more painful, and I was still counting calories and fat content in a journal. I noticed milk made my symptoms worse, so I started watching my intake.
Later, during triathlon and Ironman training, I learned more about the power of food. I made healthier choices, but my mood swings and GI issues persisted—worse than ever! Despite going hardcore gluten-free and taking doctor-prescribed supplements, nothing changed. I was training for Ironmans, but still felt awful, and my knee and back pain lingered.
I began to realize that dairy and sugar, especially combined, were huge triggers for my gut issues. Sometimes, though, there wasn’t an obvious cause. I kept food diaries and did my best to limit dairy and sugar. Frustratingly, the symptoms remained.
In 2015 my mom was diagnosed with Alzheimer's Disease. Her diagnosis lit a fire in me to learn everything I could about Alzheimer's as I wanted to help her AND I did NOT want that as my destiny. I dove deep into Functional Medicine, learned about my microbiome, SIBO, environmental toxins, liver health, genetics, hormones, and food sensitivities. After testing, I found out that gluten and grains were causing high inflammation in my body. I finally had the evidence to make the life-changing decision to eliminate gluten and grains for good.
Immediately, I felt leaner and more comfortable in my clothes. Though I still enjoyed wine and the occasional ice cream, I focused on staying mostly gluten, grain, dairy, and sugar-free. But my gut issues and post-pregnancy acne still didn’t fully resolve.
I tried diets like Whole 30 (made it to Day 27) and took breaks from alcohol, but didn’t see much difference. In my Functional Medicine studies, the Elimination Diet kept coming up, but I resisted—thinking, “I’ve already given up so much; what’s left—coffee, wine...?”
My mom died in 2022. The following year, after a series of emotional challenges and fluctuating hormones, I hit a low point in my mood and energy. I sought help from a doctor specializing in women’s hormones, and the week before my appointment, I had an emergency appendectomy, and during the surgery, they discovered I had fatty liver disease. It was incredibly frustrating—I thought I had been eating so healthy!
That’s when I knew I had to hit the reset button. The doctor’s office had a $1500 reset/elimination program, and I knew it was time to invest. I also had a good friend who joined me in going alcohol-free for the month and I was held accountable by both my investment and doctor. It was hard, no doubt, but I discovered which foods had been silently fueling inflammation in my body. Finally, I had the clarity I needed to take control of my health.
Today, I’ve pieced together my 'secret sauce'—a combination of clean eating, dry brushing, sauna sessions, exercise and supplements tailored to my genetics. It’s a lot of work sometimes, but the benefits are absolutely worth it. I feel better than I ever have.
I’ve learned that understanding your body takes time and persistence, but the rewards are undeniable. Now, I’m ready to help others find their own 'secret sauce'—a formula for health and vitality that works for them. You don’t have to go it alone.

Jennifer Chudy Shepherd,
MSPT, CFMT, FFMT, FAAOMPT, IFMCP
Jen Shepherd, a Physical Therapist, unknowingly began her health journey at a young age, facing challenges such as GI issues, back pain, painful periods, knee pain, weight fluctuations, and mood swings. Driven by her own experiences with medical practitioners, she pursued a career in Physical Therapy, determined to offer better care to others.
However, as her own health and patient outcomes stagnated despite exercises, stretches, and joint mobilizations, Jen's curiosity led her to seek deeper answers. She found mentors who taught her to view the body as an interconnected system of organs and systems working in harmony. Through this holistic approach, she learned to address the root causes of health issues by improving organ function, which in turn affected the entire body.
Jen's passion for health deepened when her mother was diagnosed with breast cancer, followed by Alzheimer's. This personal experience fueled her desire to understand how to prevent diseases commonly attributed to aging. As a Fellow with the American Academy of Orthopedic Manual Physical Therapists and a Certified Practitioner of Functional Medicine with the Institute for Functional Medicine, Jen has mastered the art of eating for her genetics, healing her gut and old injuries, and supporting her nervous system to optimize her health as she approaches 50.
Today, Jen helps people across the country who have struggled to find answers from specialists. Through her Integrative Manual Physical Therapy approach, she empowers them with the skills and tools needed to restore their health and thrive for a lifetime.
